Just another fluffy soft and delicious pancake recipe. Easy and fun!
Combine flour with baking powder and salt and stir well. In a medium bowl, mix together egg yolk, vanilla extract, melted butter, sugar and milk, using an electric mixer. Now sift in the flour mixture and continue mixing for a few minutes. Now whip the egg white until soft peaks and gently mix it into the batter. Don’t use the electric mixer at this point, so the batter remains fluffy. Set aside to chill for 15 minutes.
Heat the non stick pan over medium heat, and scoop about 2 tbs batter into the pan. Cook until little bubbles appear on the top, and then gently flip it, and cook until golden brown. Transfer the pancake onto a plate, and the next one on top over the first one, and so on. Keep them on a warm place, or in the oven, that you preheated to a low temperature, so they remain soft and fluffy.
