Just a little healthier way to enjoy your early mornings; with a cup of coffee and these yummy crunchy oatmeal cookies.
3/4 cup vegetable fat
1/4 cup butter
4 tbs sugar
1 whole egg
3/4 cup whole wheat flour
1/4 cup ground oats
1/2 cup oat cereals
1 tsp baking powder
1 tsp pure vanilla extract
Preheat the oven to 357 F. Combine whole wheat flour with ground oats, oat cereals and baking powder, and set aside for later. In a medium bowl mix butter and vegetable fat with an electric mixer for approximately 5 minutes, than add sugar and mix for another 5 minutes on medium speed. Add the egg and vanilla extract and continue mixing. Gradually add the flour mixture while mixing slowly. The batter should be stiff, so you can easily knead it with your hands.
Prepare the baking sheet and cover it with parchment paper. Form little balls, place them on the baking sheet and flatten them with a glass. Bake forĀ 8-10 minutes.
(for a chocolate version of these cookies just add 2 tbs cocoa powder)
