Every chocolate and coconut addict should try this recipe. Who could ever refuse these super soft and delicious coconut squares??
Preheat the oven to 275 F. Mix melted butter, sugar, rum and eggs in a medium bowl. Gradually add milk, and continue mixing on medium speed. Add flour with baking powder and mix for another 5 minutes. Pour the batter into a slightly floured baking tin (about 16″ x 10″) Bake for about 25 minutes, or at least until a toothpick, inserted into the center, comes out clean. Place it on a wire rack and allow it to cool, then slice into 1,5 inch squares.
Melt the chocolate and butter, and mix together. Add sugar, rum and milk and stir well. Place the coconut flakes into a smaller bowl.
Dip each square into the chocolate mixture, and then roll in the coconut flakes.
