Cottage Cheese Štruklji


Another well-known Slovenian specialty is called “štruklji. Štruklji are made of ‘stretched’  (phyllo) dough, which is very thin, and spread with various fillings, like walnut, cottage cheese, potato, tarragon, mint, beans, spinach,.. then made into a roll, which is wrapped in cloth or aluminum foil and cooked in boiling water.


For the dough
  • 2  cups white flour
  • 1 egg
  • 1 tsp vinegar
  • 3 tablespoons oil
  • 3/4 cup water
  • Pinch of salt
  • 50 dag cottage cheese
  • 2 dl sour cream
  • 3 tablespoons sugar
  • 1 egg
  • 1 tablespoon breadcrumbs
  • 1 tablespoon butter
  • 2 tbs butter
  • 4 tbs breadcrumbs


Combine flour, egg, 0il and the mixture of water, salt and vinegar and make a soft dough. Let it rest in the fridge for about 30 minutes. Meanwhile prepare the filling. Melt the butter, add the other ingredients for the filing and mix well until smooth.

Stretch the dough on all sides using your hands so it gets extremely thin. Place it on a flowered cloth. spread the filling over the dough. Roll up and wrap in the cloth. Place it in boiling water and cook for about 30 minutes. Cut the cooked roll into smaller pieces. melt the butter with breadcrumbs and pour over the rolls.

Serve hot.
