I must say I love strawberries; especially in combination with chocolate. Yeah.. I could say I love everything, If there is chocolate included:) So here’s a really simple recipe for a delicious strawberry-chocolate cake. Irresistible!
Preheat the oven to 375 F. First of all, whip the egg whites until stiff, and set aside, on a cold place. Mix the egg yolks with sugar and vanilla extract in a medium bowl. Add melted butter and milk and continue mixing at medium speed. Combine flour with baking powder and cocoa powder, and sift it in the egg mixture. Mix on low speed for a while and then increase to medium. After about 3-4 minutes, when the mixture is completely smooth, carefully stir in the whipped egg whites. Don’t use the electric mixer at this point, so the mixture remains fluffy. Pour the batter into a well greased cake tin, and bake for 35-40 minutes. Use a tooth pick to test whether it’s done. Now take it out of the oven and let it cool on a wire rack for 20 minutes. After it’s cooled, cut it through the middle to make 2 layers.
Meanwhile make the frosting.
Blend 1/3 of the strawberries, and cut the other 2/3 into small pieces. Mix the gelatin with 3 tbs cold water and leave it to bloom. Heat the strawberry nectar, with vanilla extract, sugar and blended strawberries. Just before it boils, mix in the gelatin, stir well and remove from heat. Add the strawberry pieces and set aside to cool for at least 30 minutes. Now mix the whipping cream, and when it’s stiff, add the cooled strawberry mixture, and mix for another minute or so. Set in the fridge to chill for 1 hour.
Spread 1/2 strawberry cream over one layer and cover it with the other. Use the other half around the cake and over the top.
Decorate with whole strawberries and whipping cream.
