I got this recipe from a friend of mine, he claimed these are the best roasted potatoes I’d ever eat. So I had to try making them on my own, and realized they are very close to perfect Here’s the recipe:
Preheat oven to 375 F. Peel the potatoes and cut them in quarters. Arrange them into a baking pan and add salt and pepper and minced garlic. Pour over the olive oil and cover with aluminum foil. Bake for about 45 minutes, then remove the foil, add parsley, set the oven to 400 F and bake for another 15 minutes uncovered. Serve hot.
