I was looking for a new taste, when I came across spaghetti carbonara. It looked so good, It smelled so fine.. and I wished that dish was mine..
Cut the panceta into cubes about 1/4 inch thick. Heat the olive oil and butter, with chopped garlic and onion, in a large saucepan over medium. Saute until translucent, then mix in panceta. Add panceta and cook for about 2 minutes, or until it starts to crisp at the edges. Pour in sour cream and whipping cream, stirring constantly. Season with salt and pepper, but be careful with salt. The panceta already makes the dish almost salty enough. Remove from heat, add cheese and mix well.
Break the egg into a big bowl and beat it gently with a fork. Add salt, pepper and the chopped parsley and mix. Add the cooked and drained spaghetti and toss rapidly. Pour in the sauce with panceta, you made earlier and toss thoroughly.
Serve at once.
